I just made a batch with fresh peaches boiling in the pear juice with the ginger. It is delicious, so are the peaches and ginger leftover. I put the candied peaches and ginger in a blender, mixed about half a cup with about a cup of almond meal, 1/8 teaspoon salt, 1/8 teaspoon baking powder, little bit of almond milk, scoop into balls, press criss-cross with a fork, bake at 325 for 10 minutes. They will seem undercooked but harden when they cool. Almond-peach-pear-ginger shortbread cookies, no flour, no added sugar, all vegan.
You can also make a pear juice syrup without the ginger just as a sugar substitute. It barely tastes of pear, only sweet, and mixed with stronger flavors you can't taste it at all. I dunno how much sugar is in a few spoons of the syrup, but it's gotta be less than refined sugar, and at least it is just natural fruit. The amount of honey is tiny, but it does impart a nice flavor. You can use different fruit juices or put other fruits, roots, herbs, whatever. It's great on pancakes, fantastic in tea.
Next I am gonna make cola by boiling citrus zest (all types), lemon, coriander, star anise, vanilla pod, ginger, cinnamon sticks and dried lavender in the fruit juice.
Edit: I forgot to mention, add a spoon or two of the syrup to the cookie batter.
