If your license hasn't updated and still shows one activation, then it's your old dongle-only license from 10-15 years ago (or depending when you bought it).
Dongles offer a different set of advantages and trade-offs over cloud licenses (not least the ability to continue to work offline.)
I'd guess the demo licenses are still the old ones and haven't been updated, and they'll probably get around to updating those too (might be worth giving their support a nudge).
(It seems they haven't finished migrating existing users' licenses yet, which is probably the priority right now, so maybe the trials will follow when that's done.)

A lot of people have iLoks, so this wouldn't prevent a lot of people demoing it as it is, but yes, I agree that the trial licenses need to support machine activation if the full licenses do as well.
